Notes on the box.

This is the last of the sweet corn for the season. This is the last of the cucumbers for the sesason. Late blight has arrived giving the remaining tomatoes just a couple more weeks…. dare I say what everyone already knows? I guess since school has started it’s safe to say it… summer is bout done. The good news is that fall broccoli is here! And there are soups and roasting and other cozy things to look forward to! Sigh.

Cheese curds! and Arcturus, which is an english style of cheese. If I made the cheese curds without pasteurizing the milk and then pressed them, you would end up with Arcturus. Enjoy it with some apples or honey or cured meats.

Recipes.

Roasted Tomato Sauce
a good way to use up tomatoes and you can also freeze and store it!
core and quarter tomatoes. Spread on a rimmed baking sheet or roasting pan. Add peeled cloves of garlic. drizzle with olive oil and sprinkle with salt and your favorite italian or another favorite seasoning (optional). Roast for an hour at 375. Allow to cool a bit and blend. You can add broth and cream to make tomato soup at this point, too!

As mentioned above, summer is wrapping up and fall is quickly coming up! We will be opening sign-ups for out season extension very soon! Expect an email with those details soon.

Notes on the box.

Tomatoes, sweet onions, cilantro, and bell peppers diced and mixed together for a nice fresh mild salsa. Add a hot pepper if you have one!
Everything you need for a nice mirepoix - onion, celery, and carrots. Or the Cajun version (aka the holy trinity)- bell peppers, onions, and celery. Both provide the base for many a delicious dish! Like Chicken and Dumplings or Pasta e Fagioli. Chicken and Sausage Jambalaya
One more week of sweet corn after this!
Tomatoes will keep coming. As will peppers and more and more will be red as the season moves on. Melons will be in the boxes again next week. Planning on basil in the box next week. Remove carrots tops immediately for best storage.

Garlic Dill Quark and Moonglow aged cheese. A fancy cucumber quark sandwich is nice. And so is a giant overstuffed quark and veggie sandwich.

Notes on the box.

BLT time! No better summer dinner than a nice BLT and corn on the cob enjoyed outside.
Everything except tomatoes should be stored in the fridge. Remove tops from bunched carrots for best storage. Corn is best eaten sooner than later! More coming next week! If you think you might not get to it, simply cut it off the cob and put it in a freezer bag and freeze it for later use. We’ve tried blanching and not blanching it before freezing and couldn’t tell the difference, so now we skip that step.

Ricotta again! and Antares, our cow’s milk manchego. I really like the Antares grated on eggs. And Ricotta is nice sweet or savory.

Recipes.

Tzatziki (Cucumber Yogurt Sauce)

Greek Pasta With Leeks from Farmer John’s Cookbook
12 oz uncooked spinach pasta, any shape        
6 cloves garlic, minced
2-4 leeks, cleaned, trimmed & thinly sliced
2 tsp fennel seed or chopped fennel
1 Tbls olive oil
1 can (28 oz) crushed tomatoes (or use chopped fresh tomatoes)
½ cup Kalamata olives, chopped
1 tsp dried oregano
Salt & pepper to taste
2 oz feta cheese, crumbled
Cook pasta and set aside.  Saute’ garlic, leeks and fennel seed in oil in large skillet until leeks are soft, about 20 minutes.  (If mixture sticks to pan, add a little water.)
Stir in tomatoes, olives, oregano and salt.
Simmer uncovered until sauce is reduced, about 20 minutes.
Remove from heat;  add black pepper and feta cheese.
Combine sauce with pasta and serve.
